Buckle your seat belts because your going on a wild raw ride to taste bud heaven - cue the angels descending from heaven as the clouds part... this raw sugar free recipe is sure hit in your household! You can make this raw recipe with any berry that you like depending on whats available as well.  A lot of raw recipes take hundreds of ingredients and time and preparation where as this sugar free recipe is so easy it will have you running for the coconut cream!

These recipes do not contain any cane sugars but there are sugars from the dates and strawberries. These are natural and as a part of a balanced diet they are a healthy source of carbohydrate



Strawberry and Coconut Cream Pie

Raw - Sugar Free - Lactose Free - Gluten Free - Whole Foods Recipes

Sugar Free Base - Always the night before to set properly

1 cup of cashews- ground in blender
1 cup of almond flour
1 cup of coconut shredded and dried ( like dessicated )
1/2 cup of soaked dates ( pre soak for 3 hours prior then drain off water )
5 tbsp melted coconut oil
4 tbsp. agave syrup ( or honey ) 

Process all ingredients in a blender , you may need to scrape the mixture down a few times. Once it forms a mealy dough texture remove and press into your tin. You can use anything from mini cheesecake tins to a flan dish to a 8 inch cake tin. You can press the mixture in parts till you cover the bottom and sides. If it wont stick then add more dates and process again. Once it's pressed into the tin you can then set this in the cooler over night the night before you need it. Or for 6 hours prior to use. This stops any leaking from your fruit making it sloppy!

Sugar Free Strawberry filling
 500 g washed and halved strawberries - if they are small leave them whole.
6 dates pre soaked for 4 hours
3 tbsp honey or agave
2 tbsp  melted coconut oil

Blend the honey, dates and coconut oil until smooth. Lay all strawberries to cover the base of your dessert until even and then pour over the honey/oil mix you can move the strawberries around the get them all covered. Press into place and pop back in the fridge while we finish the cream!

Sugar Free Coconut Whip Cream
3 Cans of coconut cream
2 tbsp agave or honey
1 tsp pure vanilla

Set the cans of coconut in the cooler the night prior. The contents will seperate into liquid and solids. When it's time to make the pie drain off the excess fluid from the cans and tip the solids into a bowl. Add the rest of ingredients and beat with a beater of bu hand until thick and creamy. Now pour over the pie and place in the cooler for two hours to set.

This pie needs to stay cool to hold it's shape so if need be you can chill in the freezer for 30 mins prior to serving.

  5. Hi! I'm allergic to cashews and I was wondering if you could use almonds to substitute, or maybe a nut-free alternative? I'm not sure what to use to stay close to the desired texture. Thanks! :)
