I've been craving a taste of my childhood lately so I set out to make a Raw and Vegan Recipes for Lemon Meringue Pie Recipe! This raw Recipe is a vegan recipe except I use honey. If your vegan then use agave  raw, I've made them in mini versions but you could make one in a large 10 inch cake tin, a flan dish or anything really! I've been tweaking this vegan lemon meringue pie recipe for a few weeks now and I reckon it's almost perfect!


Now I'm sure you all understand what Vegan means - i.e. no animal products or by-products but what is Raw? Raw is essentially exactly what it sounds like, it's raw , uncooked, Unprocessed, Unchanged, whole food. It means getting the most out of your food by now because you do not destroy any of the nutrients in the food from cooking it. Your body receives the goodness in it's natural form . Raw is a good way to cure and prevent sickness and disease

Raw Base Vegan Recipe                             Raw Lemon Cream Vegan Recipe
2 Cups of Almond flour                                      2 Cups of soaked cashews
1/4 Cup melted coconut oil                                1/3 Cup of cacao butter melted
1/4 cup of honey                                                   1/2 Cup of lemon juice freshly squeezed
1/2 Cup of soaked dates                                      1/3 cup of soaked dates
1/4 teaspoon of salt                                              1/3 Cup of almond Milk
*you can replace almond flour                           1 Tablespoon of vanilla
with crushed almonds if you want
Raw Meringue Recipe
1 can of coconut cream chilled over-night
1 teaspoon of vanilla
1 tablespoon of agave or honey

Raw Base Recipe

Blend dates,salt, oils and honey/agave in a blender until smooth. Add almond flour OR crushed almonds and blend quickly , scrape down and quickly blend again. Don't over do it you don't want a bowl of muck :) You can also do this part by hand if it's to thick. Press into your muffin tins, molds, or cake tin ( which ever you use ) and freeze over night to really set it well. This is super important, Don't skip it!

Raw Lemon Cream Recipe

Combine all ingredients in the blender but only 1/2 of the lemon juice stated until really smooth. Taste it. Is it lemon enough for you or is it to sweet? This part is really your choice- keep adding until it tastes lemon enough for you. Keep blending until super fluffy smooth. Pour over the base and set in the freezer until firm to touch

Raw Meringue Recipe

Obviously we can't make real meringue so I have gone with a coconut whip! The flavours are very complementary.  Your can of coconut cream should have chilled over- night. If it hasn't yet then you will need to let it have this time. Once chilled open and drain off fluid. Scoop out the thick cream. Add the rest of the ingredients ( agave and vanilla 0 and whip with beaters until smooth. Slather your pies and place back in the fridge to set :) Now go and enjoy your raw lemon meringue pie recipe!

  1. These look really good. However, you know that honey is not classes as vegan?
    You may want to change it to agave or maple syrup to make this vegan.
