I was walking past Miss Maud's Swedish pastries yesterday and I spotted a strawberry flan that made my knees go weak. I'm your typical women so I'm standing there having a battle in my mind....Literally shaking and it took a fair bit of willpower to keep walking...haha oh how dramatic
So it got me thinking how easy it would be to actually make my own from raw unprocessed, sugar free, lactose free, gmo free ingredients that nurture and replenish the body, ingredients that boost your metabolism, help control sugar cravings, assist in heart health, brain function and general well being. I Could invent the recipe for Raw Strawberry Caramel tarts instead of putting my body at risk of diabetes and heart disease....Yes...So here is the raw recipe , just for you. Raw Recipes - Raw Strawberry Caramel Tarts
Tart Bases
1 Cup of Shredded Coconut
½ Cup of pecans
1 Cup of Walnuts
6 Medijool dates (or 12 soaked normal dates)
2 Tablespoons of Agave Syrup
¼ Teaspoon of Salt
2 Tablespoons of melted Coconut Oil
Raw Recipes Caramel
2 Cups of soaked dates – soak for two hours minimum then drain
1/4 Cup of Raw Honey
¼ Cup of melted coconut Oil
1 tablespoon of Almond Butter – You can omit if you can’t find it or can’t find a raw version just add 1 more tablespoon of honey
1 Tablespoons of Almond Milk
¼ Teaspoon of salt
Raw Recipes Strawberry Topping
500g of fresh Raw washed and quartered or halved strawberries – depends on your recipe preference
2 Tablespoons of Agave syrup

To make the Raw Crust, combine the nuts in the food processor and blend until finely chopped. Add the rest of ingredients and blend until a doughy, chunky mix is formed.Press into greased tart tins, or you can use muffin tins, or a large cake tin to make one large tart/flan.
Cool for 4 hours in the freezer to set prior to filling. Do not miss this step out.
Combine all caramel ingredients in a food processor and process until really smooth.
Pour into tins, moulds or flan trays. Whichever your making!
Gently lay all strawberries into your circular layers and add the whole strawberry in the middle for presentation.
To get your agave syrup really runny place in a bowl in the sink with warm water about 20 mins prior to use
Gently pour a dash of agave syrup over each one to get the strawberries shining.Chill for 3-6 hours and then serve!
