Raw Chocolate Recipes - raw Bounty Bars recipe
3:03 AMOMGEEEEEEEE It's one of those raw chocolate recipes that you can go absolutely bananas over if you like. go on have a little dance! I haven't yet experimented with many raw chocolate bar recipes so I thought we would have a few weeks of playing with the idea. If your like me and you just love chocolate, especially chocolate bars then this is the week for you! This raw chocolate bar recipe for bounty bars, it is an incredible way to get your chocolate fix without the hidden nastiness sugars and allergens! Best yet we are using a cacao butter as a base for the chocolate so yip it is going to taste pretty spectacular! It's less oily than a raw chocolate recipe made from coconut oil and therefore a lot more edible!
And even the sweetest sweet tooth will be satisfied!
So the recipe I'm going to also share with you a really amazing way of making raw chocolate that I have not posted before. Nor have I included in any of my recipe books. This is my top secret personal recipe and today I'm giving it to you all for being such amazing followers!
So let's get into the recipe!
Raw Chocolate Bar Recipe - Raw Bounty Bars Recipe
You will need:
Mixing bowl
Spatula
Bain Marie ( this is a pot with water boiling and a bowl/pot that goes on top to heat stuff it! If you don't have one just improvise)
Large baking tray lined with baking paper
Titanium willpower not to eat it all while making
Raw Bounty Bar filling Ingredients
2 cups of dedicated coconut (or find a local organic dried and shredded one if you like )1/4 cup of coconut oil melted
1/3 cup of honey
1/2 cup of soaked cashews pureed with water to form a thick paste
2 tbsp vanilla
Juice of one lemon
pinch of salt
4 tbsp cacao butter melted

Melt the coconut oil and cacao butter. Add in the coconut, honey, vanilla, pureed cashews lemon and salt and blend up in the processor. Don't do this for to long as you don't want it to fine.
Scoop out and press into a flat try into a thick flat slice. Pop in the freezer to firm up while we make the next part. You want this to be hard and set to move on!
Once it is hard you can score lines for the size you want your bars. Then cut with a hot sharp knife and pop out into your individual bars.
Now your ready for the chocolate covering!
Raw Chocolate Ingredients
1.5 cup of cacao butter in solid form
1 cup of cacao powder
1/4 cup of almond milk
1/3 cup of honey or agave or maple syrup (you choose)
2 tbsp vanilla
1/4 tsp sea salt
1/4 teaspoon of stevia or if you use xylatol then 2-3 tbsp.Do not get ANY water in this! Melt cacao butter in the top bowl/saucepan. It's important not to heat over 113 F as then it wil not be considered raw anymore! Melt until a smooth yellow liquid appears then add the cacao powder, honey, stevia, salt and vanilla, continue to melt and stir. Add the almond milk and then stir till mixed. Turn the heat off and place it in the freezer for 10 minutes. After this you can melt it again up until 113F and keep stirring.
Once melted and warmed through take off the heat and let cool down to room temp on the bench. Pour it into a cold bowl.Stir every two minutes and when it has thickened up you can dip each bar in and then lay them flat on the lined tray. Once all bars are dipped you can pour over the top for extra chocolate!

ps If you got any water in ti it would have gone a strange texture like rubber - it's useable just wont taste as nice :)
