Layers of tangy rich tomato marinara sauce, sweet creamy 'ricotta' and a fresh kick of basil pesto...what more could you ask for in this vegan inspired raw lasagna recipe! We aren't even trying to replace the 'meat' as it's just not necessary with all the flavors and goodies going on in here!


 This recipe is relatively low in nut content so it's a fantastic low calorie option for a raw dinner recipe!

Raw Vegan Marinara Sauce
2 cups of sun dried tomatoes soaked for two hours
Basil and Ricotta Lasanga - Raw Lasanga Recipe


1 medium tomato
salt to taste
pepper
5 tbsp olive oil
1 tbsp apple cider vinegar
2 tbsp chopped onion
3 tbsp lemon juice
pinch of paprika
pinch of chilli flakes
1 tbsp honey

Combine all ingredients until thoroughly processed in a blender. It should be sweet, tangy and smooth. Place aside in a bowl. This vegan recipe is a hit with non raw foodies as the flavors really hit the taste buds well! You can use it for raw pasta or as a topper for salads etc

Raw Vegan Pesto
Basil and Ricotta Lasanga - Raw Lasanga Recipe
2 cups packed basil leaves
1/2 cup pistachios
1/4 cup plus 2 Tbsp extra-virgin olive oil
1 tsp sea salt
Pinch freshly ground pepper

Roughly blend all ingredients in the blender- Don't over blend as you don't want it to be a paste. Now place aside

Raw Vegan Ricotta
1 cups raw pine nuts, soak for 2 hours in filtered water
 3 Tbsp lemon juice
 3 Tbsp nutritional yeast
1 tsp sea salt 
9 Tbsp filtered water
1/4 cup of soaked cashews

Combine all ingredients except the water until smooth . Now add a tablespoon at a time and blend until smooth and fluffy like ricotta

Raw Vegan Pasta sheets
4 zucchini, ends trimmed
2 Tbsp extra-virgin olive oil
Fresh oregano and fresh thyme finely sliced
Pinch of sea salt
Ground pepper

Thinly slice the zuchinni as pictured and then  toss through olive oil, oregano, salt, pepper and thyme.

Garnish and Assembly
3 medium tomatoes,thinly sliced
 basil leaves for garnish, sliced

Lay out four slices of zucchini to make an oblong shape. Cover with tomato sauce, then the ricotta. Then add a spoonful of pesto, slices of tomato then another layer of zuchinni. Repeat this stack until your hearts desire! The higher the better.raw lasagna recipe

  1. I made this last night for my husband who isn't a vegetarian. He loved it! I loved it too! It was so tasty! He thought it was restaurant quality worthy. The only thing is a used actual ricotta cheese instead of making the one with the nuts. Fabulous dish! And there is extra for tomorrow night!
