Raw Pizza Raw Recipes - with Vegan Ricotta Recipes

I love raw cheesecake recipes but I guess once in a while I better give you something a little savory! This Raw Pizza is just delicious and it's really simple. I had the craziest thing happen yesterday which has spurred me to write a few more Raw savory recipes. After no having any nuts for two weeks I had some cashews in one of my recipes only to have an allergic reaction and figure out what was causing the random eczema that had made its self at home a few months earlier...OH DEAR GOD NO! so of course I'll keep writing you recipes with cashews in but I think it's time we branched out and went nut free and cashew nut free on a few recipes! This recipe we make a a fluffy ricotta and it's just incredible with the sundried tomatoes!

For the Base
Here's the fun part. I found a field mushroom the size of a dinner plate at the markets but if you can't find one then try for at least hand span size and make a few minis.
Mix up 1/4 cup of olive oil with sea salt , pepper and 1/4 balsamic vinegar. Add to the mix fresh oregano and basil finely chopped. Spread over each side of each mushroom and place them in the dehydrator on a medium setting until they change to a dark brown and are no longer raw looking! This usually takes about 4 hours and you will need to 'baste' each side periodically. My current dehydrator doesn't have the temp setting working right so start on a medium temp and go from there by sight
For the Sauce
1 cup of soaked sundried tomatoes - soak for 2 hours prior to use in just a little warm water then drain off
1 tbsp apple cider vinegar
1/2 cup fresh basil leaves
1 tbsp chopped red onion
pinch of sea salt
Pepper
2 tbsp olive oil
2 medium fresh tomatoes chopped finely
pinch of chilli flakes
pinch of cumin
Blend until rough and chunky mix forms. Spread across each pizza base
For the Cheese
1and a 1/4 cup of pine nuts- pre soak for 4 hours then drain off
1 tbsp olive oil
9 tbsp water
1 tsp sea salt
4 tbsp nutritional yeast
4 tbsp lemon juice
Combine all except water until completely blended- blend for as long as possible. Now add 2tbsp of water at a time until light and fluffy. Spoon over the pizza to semi cover to sauce
The Toppings
1 cup of chopped sundried tomatoes
1 cup of fresh basil leaves chopped
1 cup of baby spinach leaves
1 cup of fresh tomatoes finely sliced
1/2 cup of black olives finely sliced
red onion- SUPER finely sliced rings
1 Cup of finely long sliced eggplant soaked in olive oil, salt and paprika ( dehydrate on high until almost crunchy) ** Optional but oh so worth it !
Thinly sliced Avocado - 1 medium
Scatter all ingredients across the pizza and cut into slices ready to eat! Enjoy :)!!

More recipes. This is an interesting one. Pine nuts to resemble the cheese. Can't knock it till you try it. Thanks for the recipe!
