One of the issues faced as a Raw or vegan foodie is that getting a balanced meal in that has the right ratios for healthy fats,carbohydrates and protein to maintain a healthy weight, a happy mind, a disease free body and still have energy for the day. You need to make sure your Raw food is also keeping you healthy and not deficient.And then you go and pop trying to feed children on top who are fussy little critters and it is a challenge. Raw food for Kids??? Getting kids to eat raw desserts is easy...but what do you do for the rest of the day? With the added hassle that creating raw food recipes can be really time consuming! I love raw cheesecake recipes but I guess once in a while I better give you something a little savory! This Raw Pizza is just delicious and it's really simple. I had the craziest thing happen yesterday which has spurred me to write a few more Raw savory recipes. After no having any nuts for two weeks I had some cashews in one of my recipes only to have an allergic reaction and figure out what was causing the random eczema that had made its self at home a few months earlier...OH DEAR GOD NO! so of course I'll keep writing you recipes with cashews in but I think it's time we branched out and went nut free and cashew nut free on a few recipes! This recipe we make a a fluffy ricotta and it's just incredible with the sundried tomatoes!

For the Base
Here's the fun part. I found a field mushroom the size of a dinner plate at the markets but if you can't find one then try for at least hand span size and make a few minis.
Mix up 1/4 cup of olive oil with sea salt , pepper and 1/4 balsamic vinegar. Add to the mix fresh oregano and basil finely chopped. Spread over each side of each mushroom and place them in the dehydrator on a medium setting until they change to a dark brown and are no longer raw looking! This usually takes about 4 hours and you will need to 'baste' each side periodically. My current dehydrator doesn't have the temp setting working right so start on a medium temp and go from there by sight
For the Sauce
1 cup of soaked sundried tomatoes - soak for 2 hours prior to use in just a little warm water then drain off
1 tbsp apple cider vinegar
1/2 cup fresh basil leaves
1 tbsp chopped red onion
pinch of sea salt
Pepper
2 tbsp olive oil
2 medium fresh tomatoes chopped finely
pinch of chilli flakes
pinch of cumin
Blend until rough and chunky mix forms. Spread across each pizza base
For the Cheese
1and a 1/4 cup of pine nuts- pre soak for 4 hours then drain off
1 tbsp olive oil
9 tbsp water
1 tsp sea salt
4 tbsp nutritional yeast
4 tbsp lemon juice
Combine all except water until completely blended- blend for as long as possible. Now add 2tbsp of water at a time until light and fluffy. Spoon over the pizza to semi cover to sauce
The Toppings
1 cup of chopped sundried tomatoes
1 cup of fresh basil leaves chopped
1 cup of baby spinach leaves
1 cup of fresh tomatoes finely sliced
1/2 cup of black olives finely sliced
red onion- SUPER finely sliced rings
1 Cup of finely long sliced eggplant soaked in olive oil, salt and paprika ( dehydrate on high until almost crunchy) ** Optional but oh so worth it !
Thinly sliced Avocado - 1 medium
Scatter all ingredients across the pizza and cut into slices ready to eat! Enjoy :)!!

Coconut Apple Bread with Sweet Nut Butter
1 Cup of finely shredded dried coconut
2 tbsp. coconut flour
1 cup of almond flour
2 tbsp. honey/agave/maple syrup (whichever you prefer)
1 large apple finely grated
1/4 cup of walnuts finely blended
1/4 cup of almond milk
2 tbsp. chia butter
2 tbsp. coconut cream
pinch of ground sea salt
***Chia butter is an alternative to butter or milk that you can use in your normal baking. To make this just add equal parts chia seeds to water. Let it soak the water in till the chia turns to a gel then blend until a soft grey colour appears. this is chia butter.
To make the raw bread recipes Mix all ingredients , you don't need to use a blender for this. Shape into a log and pop in your dehydrator on 145 for an hour till you get a bit of a crust around the edges. Now remove and slice into 10 pieces ( these are small pieces ) and dehydrate for an additional 8 hours or until your desired texture is reached. Yum raw bread!
Sweet Nut Butter
1/2 Cup of almonds****
1/2 Cup of peanuts ( or just use almonds if you don't like peanuts)
2 tbsp. agave/honey/maple syrup (whichever you prefer)
1/4 tsp. sea salt
2 tbsp. olive oil
Blend all ingredients until your nut butter forms. For more double the recipe and for less halve it! If you like it a bit saltier then add another pinch and blend until the desired flavour is reached.
*** Use any nuts you prefer
Now slather all over your raw bread :) Enjoy!
