Passion-fruit Swirl and White Chocolate

Almond Walnut base
1 cup of Almonds
1 cup of Walnuts
10  soaked dates
Pinch of Sea Salt
3 TSP liquid Vanilla
2 TBS Coconut Oil
2 TBS Agave Syrup

All dry ingredients in the blender. Break down the nuts – Don’t process to long or it may turn into a mush of nut butter as walnuts are OILY as. Once broken down remove and place aside. Place remaining ingredients in the blender and mix really well until a smooth paste appears. Add in the blended nuts and blend until smooth. Grease a 7”  or larger pan with coconut oil and press the mixture in to the base. Pop in the freezer.

Pop in the blender everything except Cacao Butter and lecithin. Blend until really smooth. Add the lecithin and cacao butter and resume blending – keep blending until a very smooth consistency forms. Set aside 1.5 Cups of the mixture and pour the rest of the mixture into the tin

With the mixture you have set aside mix with 1.5 Cups of passion-fruit pulp, the juice of one small to medium lemon and a tablespoon of agave or raw honey. Blend really well.

  1. Hi Julia-Rose,

I wanted to check what you mean by 'liquid vanilla' in this recipe. I am imagining you must mean natural vanilla extract, except that 1/4 cup is sooooo much, and I never use more than a tsp or two of that stuff in most recipes. Not to mention a full bottle doesnt even contain 1/4 cup!
Could you shed a bit of light on what you use in this recipe?
    thanks,
    Tamara

  2. Hi ! Use 1 tbsp of natural vanilla extract

And if your using normal vanilla essence then use 1 and 1/4 Tbsp

    Yes major typo!

  3. Hi Julia, please ditch agave. Even the most organic agave interferes with blood viscosity, and has been at some point, chemically processed.

  4. Hey Julia! I absolutely love your desserts but couldn't find any cacao butter in my grocery stores (checked mostly main stream ones, I don't have any way of transportation other than the bus or bike so it's difficult to keep searching) Is there anything I can replace this with?
