Well aren't you just set to dazzle the crew with this little number! Forget sugar and donuts when you have something this pretty to indulge in in your chiller.
Avocado is one of my favourtie ingredients to sneak into a dessert.
But stop it's high in fat, isn't that bad for you?
No , quite simply Avocado is one of natures wonders. There is a difference between good and bad fats. Good fats like Avocado help you with an array of health concerns, From eye health to blood sugar, From fertility to glowing skin. Avocados in conjunction with a healthy diet and lifestyle actually help combat our top three health concerns as a population, heart disease, diabetes and obesity so gobble this one up!
Yes, Healthy food does not make calories disappear. Eating clean whole food will always be beneficial to you in some way, but to much of any thing in calories will lead to a weight gain. This is a Treat and should be treated like one. Small portions in balance with a healthy lifestyle and food choices is fine.
So let's get into this recipe
Who ever said Raw Food Can't be fun?
The Recipe!
- The night before - Make the base.
- Freeze one banana
- Soak the cashews
- Make the date paste
Ingredients
Base
I/2 Cup of finely chopped pistachios
1/4 Cup of chopped walnuts
1/4 cup of chopped Macadamia nuts
2 Tbsp. coconut oil melted
1/4 Cup (pack it) of date paste (dates presoaked till soft, add a touch of water then pureed)
Combine nuts in a blender - just enough to roughly chop and mix- You don't want it in a powder. Make sure you can still see the different pieces. Place in a bowl and then add the melted coconut oil and date paste. Mix by hand to form a rough dough and then press into a small tin. between 4 to 7 inches diameter. I used a 5 inch. Once pressed firmly in the bottom then place in the chiller to cool and set for a minimum of four hours. This step the base to firm so you wont get any leakage! I usually pop mine in the freezer overnight but you can use the fridge to they both work!
Avocado Lime Filling
1 large avocado
1 frozen banana
1/2 cup of date paste
1/2 cup of coconut oil melted
3/4 cup of soaked cashews ( soak in room temp over night )
100g Strawberries
juice of three limes
stevia to sweeten
1/4 cup of almond milk
In your food processor combine the cashews, lime juice, avocado , banana and date paste. Mulch and mix until. Add the almond milk and continue to process. Now add the coconut oil ( it must be melted) and blend until completely mixed. Taste and sweeten until desired taste is reached. You shouldn't need to much!
Chop the strawberries into halves and place around the edge of tin to make the pretty side features. Now pour in your raw 'ice-cream'. If you have some left over then pour into a container and freeze for use as ice cream later.
Now let it firm in the freezer for 5 to 6 hours or until nice and firm. you can let it sit in the chiller for 30 mins prior to serving to soften
To dress mix 1 Tbsp of cacao powder with 2 tbsp melted coconut oil and stevia to firm a chocolate. Drip over the top.. Enjoy!
