It's Beetroot...Lemon.... with a choc top that TASTES like Berry Vanilla...OH MY GOODNESS

Yip this recipe is all about tricking the kids and your loved ones into eating really healthy and not even knowing the difference!! 

The recipe is so simple to! So read on and get ready to impress!

Beetroot and Lemon Cheesecake Towers 

This will surely turn a few heads!

 


To Start

1 Cup of cashews soaked for minimum 8 hours in room temp then drained
3 tbsp melted cacao butter
1 tbsp melted coconut oil
 Pinch of salt
3 tbsp almond milk
2 tbsp agave
1/2 tsp pure vanilla
2 tbsp lemon juice

Puree cashews with milk and agave then add the oils/butters and blend until smooth. Separate into two bowls. In the first bowl is your white mixture( lemon cheesecake flavour ). Spoon evenly over 6 silicone muffin cups. In the second bowl is another serve of lemon cheesecake mixture - to make it purple add 1 tbsp of beetroot juice ( freshly squeezed) and then blend. Place aside 2 tbsp of this mixture for the starts. Now spoon over each cup cake and place in the freezer to firm up for a few hours.

Chocolate Top

1/4 cup of dates soaked until soft in minimal water
3 tbsp cacao powder
4 tbsp melted coconut oil
2 tbsp agave

Blend until smooth and spoon over the cup cakes evenly. Return to the freezer until hard.
Smother it in a chocolate dream!


Yum it's set so let's get stacking

Stack it high

You will need a silicone star ice cube tray ( Kmart $2!!)
1/4 cup of melted cacao butter
1 tbsp coconut oil
2 tbsp of beetroot cheesecake layer
2 tbp beetroot juice
1 tbsp lemon juice
2 tbsp agave

The Ice cube tray! Best find ever!
Blend and then pour over star mold and set.

Once set pop out, stack your cakes and decorate with the stars! Enjoy
