Today I am going to share with you one of my absolute favourite raw food recipes, A Raw Blueberry Cheesecake!! Yumoooo, for some time now I have had many friends wondering if I have gone mad eating this ‘veggie diet fad’. I think it’s time we cleared that myth up , don’t you think?
If your reading this then you have likely decided to research a little further into the wonders of
maintaining a healthier lifestyle so firstly I congratulate you on taking action and creating a healthier lifestyle for you and your loved ones! It’s a great journey and you will feel like you have been re born with each step you take towards better health.
Without further adue, I present to you the one and only …raw food recipes blueberry cheesecake
2 cups of almonds
1/2 cup pitted dates
2 tbs shredded coconut
4 TBS Cacao Powder
1/5 cup coconut oil melted
1/4 TSP salt
1/5 cup honey
Crush nuts in the blender then remove and place in a bowl. Now add all remaining ingredients into the blender and blend until a caramel chocolate paste appears. Remove and scrape into your nuts bowl. Rub and mix the ingredients by hand like you would a crumble until a mealy dough forms. Now press this into a greased cake tin 6 inch or larger. Use a potato masher to flatten out. Let this set for 2 hours minimum in the freezer to prevent any soak through.
Blueberry Cheesecake
3 cups Fresh Berries( I used one of blue berries and two of strawberries)
3 cups cashews(soaked overnight in water)
1/2 Cup of soaked dates
1 TBS vanilla
1/4 tsp salt,
1/2 cup honey,
1/2 cup coconut oil melted alternatively use Cacao Butter)
1/4 cup of water
Blend all ingredients except for coconut oil until smooth. Then add coconut oil and blend until beautifully smooth and creamy. Scatter a few fresh berries across the base of your cheesecake for a cool look and then pour in your blueberry batter. Level out and set in the cooler or freezer for 6 to 8 hours or until firm to touch.
