Firstly take your Cacao Powder in a bowl and slowly wet down with Water until all the cacao powder is covered and no dry lumps remain. It should all be a wet consistency but don’t make it sloppy. Set Aside and In a separate Bowl .Do the same with the protein powder. Just wet enough to get rid of the lumps. Combine these two and then add the Almond flour and mix until well mixed. You need put a lot of effort into this to get it mixed enough. Add the Salt and Cinnamon. Mix and Set Aside. If it’s dry or flaky add some more water but don’t overdo it.

In the blender/food processor add the dates, Orange Zest, Agave or honey/Maple syrup , Orange juice and blend until smooth, try not to blow up your motor and be really careful as you go. Slowly add in the cacao Butter ( it must be completely melted)  and Keep blending until a caramel orange paste forms.

Add this paste to your cacao mixture and mix by hand until really well mixed- it may take a while and do it by hand as it may break your blender.
Add In the chopped nuts of your choice and the cacao nibs and mix until through the mixture
Press into a greased tin. There is a lot of mixture. You can make it really thick or you can divide it between two tins.

Blend the Cacao Butter ,coconut oil and dates and then fold in Cacao Powder and keep blending – you may need to stop to scrape – it’s all good! Mix all chocolate ingredients and cover the top. Set in the fridge for 4-5 hours or until completely firm to touch.

Garnish with some Orange Zest and Cacao nibs and your good to go!
