Easy Raw Recipes - Coconut Cookie Dough Truffles

YUMMMOOOO upon making a favorite old Easy raw recipes for cookies this week I had a little extra 'raw cookie dough' mixture left over. So with a bit of tweaking I came up with the idea to cover them in chocolate for some scrumptious truffles!
And they are TO DIE FOR!!! I've gone a bit mad this week with new recipes so keep an eye out for Raw Snickers bars, Raw Bounty Bars and a new Cheesecake Recipe! This recipe was inspired by one of our loyal followers who challenged me to beat the amazing-ness of the last one (yes I make up my own words to) Hayley this ones for you :) xx
Raw Coconut Cookie Dough Truffles
Easy Raw Recipes
Ingredients for the Cookie Dough:1 cup of coconut flour
2/3 Can of coconut milk
1/2 Cup of shredded coconut

1/2 Cup of cacao nibs
½ Cup of Honey or agave syrup
1/3 Cup of melted coconut Oil
Mix by hand in a glass bowl. Squeeze and knead all ingredients together. The mixture may look quite crumbly still but when you press it together it sticks and forms like a dough, It will break easily though. If it's to wet for some reason add a tiny bit of coconut flour but be really careful as you don't want it dry . If it wont form a dough when pressed then add little by little of coconut milk until its right.Press into a big ball ( it will break easily so don't stress if so ) Place in a plastic bag in the freezer for 40 minutes OR in the refrigerator for 2 to 3 hours.

Ingredients for the Chocolate:
1 and 1/4 cup cacao powder
1/3 cup of cacao butter melted
1/3 cup of honey
Melt the oils and butters and then mix until a glossy ganash forms. It should be thick enough to be able to form a good layer on the cookie dough so if its to runny add a bit more cocoa...slowly! Remove dough from the cold and press into bite size balls. You will have to squeeze them into balls - if you try to roll them they will likely fall apart but squeezing works really well. Get all of the cookie dough balls ready and then place 5 to 6 at a time into your chocolate mixture. Grab a teaspoon and make sure all over is covered. Spoon out each one and place on a greased tray. Repeat until all are covered and pop them in the freezer. In about 2 hours you will have your cookie dough truffles ready to go!
