I can't resist a little nut crunch so I set out yesterday to create an EPIC crunchy peanut butter cookie to add to the Raw Recipes Collection. There's nothing quite like a cookie and it's definitely one sweet treat that I just cannot live without!


The best result will see this partially dehydrated and then chilled, If you don't have a dehydrator you can just chill it overnight - it just wont be crunchy is all!

For the Raw Recipes ingredients you will need
1 Cup of Almond flour
1/2 Cup of roughly chopped cashews
1/2 Cup of rolled oats (raw , Gluten free - you can omit this and add an extra 1/2 cup of cashew flour if you want)
½ Cup of almond Butter
½ Cup of peanut Butter – try to find  raw one!
15 Dates soaked
2 TBS of coconut Oil
¼ Cup of Honey
1 tsp Vanilla
Pinch of Sea Salt
  
To make about 12 cookies

Take all ingredients and blend until a dough forms .Throw ½ Cup of chopped peanuts in a mix by hand. Roll into balls and press into your cookie size

Dehydrate for 2 hours on a low setting then place in the refrigerator for a few hours to harden up. If you do not have a dehydrator you can just pop them in the fridge over night ( they just won’t have the crunch!) Crunchy and yum! It takes MEGA willpower not to eat the whole batch!!!!!

  1. It looks a great recipe. I just wanted to let you know that oats are not gluten free. They do contain gluten but it is a different gluten to that in wheat, so some Coeliacs can tolerate it.

    1. The recipe doesn't even claim that oats are gluten free to begin with. It states "Gluten free - you can omit this and add an extra 1/2 cup of cashew flour if you want" which means if you want a gluten free option, add an extra amount of cashew flour instead of the oats.
