YUM how insanely incredible does this raw foods recipe look? I have been on a real journey lately to cut out some of the slightly highly intolerant foods and still create amazing recipes. Both Nick and I have been finding that a few of our much loved ingredients like coconut oil and cashews have been contributing to random bouts of eczema and upset tummy's! Gosh you would think that going Raw and Vegan was enough wouldn't you?! I think when it comes down to it, you really have to listen to your own body - we are not all the same and there is no one true way or one true diet.

 Raw foods are very important as you all know because it's the only way to make sure you are getting the nutritional quality from your food and over cooking can destroy any of the good stuff and render it in a such a state that your body doesn't recognize it as food..what a mess! But when it comes to exactly which raw foods it's a process of elimination when you are picking your best diet.

Raw And Vegan Recipes taste so much better than conventional sugar laden baking crap! I made this one last night for a special order and Oh My God it is just so good i had to share it...check out the first pic I took while it was setting....I'm like a proud parent!

The first glimpse - Oh god it's heaven!

A serving of crunchy almond base followed by layers upon layers of the dreamiest creamiest caramel and then laced with the fresh zest of Ginger.

 I think if ever there was a raw recipe that topped them all in my books it's a well made raw muesli recipe with a chocolate topping. These puppy's deserve a five start gold medal  when it comes to flavor, nutrition and ease of making!
When it comes to sourcing the ingredients it's still better than candy if you just get supermarket brought nuts, dried fruit,coconut and dates etc but If your really wanting to benefit from the nutritional power pack you need to go organic and raw. I go to my local organic certified farmers market or I stop by one of the health food stores that specials in organic food. Sometimes it means buying bulk or making a few recipes at a time to use all the ingredients while they are fresh ( no preservatives so they can go rancid or depleted more quickly) but it's worth it and I tell you my body really feels the difference in energy and digestibility from eating raw recipes from organic food and produce

Easy Raw Recipes are few and far between but this little beauty is going to have the mouths watering in less than a few minutes! Best to make the icing the night before so that when your ready to whip up this easy raw recipe then it will be ready in under 10 minutes!

Raw Snacks or a Quick Meal

 Banana Berry Smoothie - Serves One

 1 medium banana  
50g of Avocado
1 scoop of Sun warrior vanilla plant protein
1/2 cup of  frozen mixed berries- frozen makes the smoothie taste like ice cream- very popular!
1 tbsp of agave (or honey if your not vegan or fussed!)

One of the issues faced as a Raw or vegan foodie is that getting a balanced meal in that has the right ratios for healthy fats,carbohydrates and protein to maintain a healthy weight, a happy mind, a disease free body and still have energy for the day. Raw Chocolate Custard Tarts - Nut Free Recipe

This recipe is a great one for those who are wanting to keep the calories a little lower or if your a high allergy person and are steering away from nuts. Make sure if so that you source pure organic raw ingredients that haven't been packaged in the same place as other nuts!
I wanted to create a delish raw recipe that had less allergens so here you go- Raw Chocolate Custard tarts Recipe

Base
1 cup of dried apricots
1 cup of dates - pre soak for two hours then drain

1.5  cup of shredded coconut
3 tbsp coconut oil
 pinch of salt
1 tbsp honey ** agave if your vegan
1/4 cup of cacao powder

Roughly chop all dry fruit ingredients then place in to the blender with the remaining ingredients and pulse to form a rough and chunky mealy mixture. You want the cacao powder mixed in properly so that the mealy mixture looks chocolatey but it still needs to be a bit chunky. Now press in to individual tart tins- MAKING sure you press up the sides to form a base like below, this is really important as it stops the custard from squishing out everywhere. Now place the bases in the cooler for four hours minimum to set which prevents any softening from the custard happening

Custard
2 medium Avocados mashed - they need to be very ripe to be amazing

1/4 cup of cacao powder
1/4 cup of honey or Maple ** agave if your vegan
pinch of sea salt
1 tsp vanilla ** pure if possible or essence if your not fanatical
3 tbsp melted cacao butter 

Melt the cacao butter  and place aside. Blend all remaining ingredients until super smooth. Now add the cacao butter and continue to blend. Pour over each individual tart evenly and place in the cooler to firm up. Usually this process takes up to four or five hours. Keep in mind it's custard so it wont go hard!

Chocolate Topping
1/2 cup of coconut oil melted
2 tbsp cacao butter melted
1/4 cup of cacao powder
pinch of sea salt
2 tbsp vanilla plant protein OR 2 tbsp almond milk
3 tbsp honey ** agave for vegans
1/2 cup of soaked dates ** pre soak 2 hours then drained 
 
Melt all oils and butters and then blend all ingredients on high. Now pour over each tart and place in the cooler to set for four hours or until firm. Serve with coconut whip and your ready to impress!

Raw Chocolate Custard Tarts - Nut Free Recipe

 

 

I love raw cheesecake recipes but I guess once in a while I better give you something a little savory! This Raw Pizza is just delicious and it's really simple. I had the craziest thing happen yesterday which has spurred me to write a few more Raw savory recipes. After no having any nuts for two weeks I had some cashews in one of my recipes only to have an allergic reaction and figure out what was causing the random eczema that had made its self at home a few months earlier...OH DEAR GOD NO! so of course I'll keep writing you recipes with cashews in but I think it's time we branched out and went nut free and cashew nut free on a few recipes! This recipe we make a a fluffy ricotta and it's just incredible with the sundried tomatoes!

For the Base

Here's the fun part. I found a field mushroom the size of a dinner plate at the markets but if you can't find one then try for at least hand span size and make a few minis.

Mix up 1/4 cup of olive oil with sea salt , pepper and 1/4 balsamic vinegar. Add to the mix fresh oregano and basil finely chopped. Spread over each side of each mushroom and place them in the dehydrator on a medium setting until they change to a dark brown and are no longer raw looking! This usually takes about 4 hours and you will need to 'baste' each side periodically. My current dehydrator doesn't have the temp setting working right so start on a medium temp and go from there by sight

For the Sauce
1 cup of soaked sundried tomatoes - soak for 2 hours prior to use in just a little warm water then drain off
1 tbsp apple cider vinegar
1/2 cup fresh basil leaves
1 tbsp chopped red onion
pinch of sea salt
Pepper
2 tbsp olive oil
2 medium fresh tomatoes chopped finely
pinch of chilli flakes
pinch of cumin

Blend until  rough and chunky mix forms. Spread across each pizza base


For the Cheese
1and a 1/4 cup of pine nuts- pre soak for 4 hours then drain off
1 tbsp olive oil
9 tbsp water
1 tsp sea salt
4 tbsp nutritional yeast
4 tbsp lemon juice

Combine all except water until completely blended- blend for as long as possible. Now add 2tbsp of water at a time until light and fluffy. Spoon over the pizza to semi cover to sauce


The Toppings
1 cup of chopped sundried tomatoes
1 cup of fresh basil leaves chopped
1 cup of baby spinach leaves
1 cup of fresh tomatoes finely sliced
1/2 cup of black olives finely sliced
red onion- SUPER finely sliced rings
1 Cup of finely long sliced eggplant soaked in olive oil, salt and paprika ( dehydrate on high until almost crunchy) ** Optional but oh so worth it !
Thinly sliced Avocado - 1 medium


Scatter all ingredients across the pizza and cut into slices ready to eat! Enjoy :)!!

Best yet we are using a cacao butter as a base for the chocolate so yip it is going to taste pretty spectacular! So the recipe I'm going to also share with you a really amazing way of making raw chocolate that I have not posted before. Nor have I included in any of my recipe books. This is my top secret personal recipe and today I'm giving it to you all for being such amazing followers!

This Coconut, Apple and Chia Slice raw recipe is a fantastic addition to your raw diet as it has a delicious tangy and fresh taste as well as a well balanced macro nutrient content! But you will need to keep your self indulgent side at bay as they are really addictive! A few friends of mine have used this recipe as an afternoon snack for their family as it's really healthy and quickly digested!

 When I say easy I mean EASY raw recipes! This slice will take you five minutes maximum, you can time this raw recipe if you like!

Layers of tangy rich tomato marinara sauce, sweet creamy 'ricotta' and a fresh kick of basil pesto...what more could you ask for in this vegan inspired raw lasagna recipe! We aren't even trying to replace the 'meat' as it's just not necessary with all the flavors and goodies going on in here!


 This recipe is relatively low in nut content so it's a fantastic low calorie option for a raw dinner recipe!

Fast dessert recipes are the key to fixing that craving quickly before the dreaded trip to the supermarket to pick up some MNMs happens!! With raw Food recipes it can be hard to create and
original, tasty and healthy snack that is also sweetly amazing in a matter of minutes! The base does need to be made the night prior but once that's done this can be made within 10 minutes!

Today we are going to learn how to make a fast dessert recipe for just this! It's also nut free! A  raw dessert pizza recipe that is fast, easy and highly nutritious. Dessert pizza's are a great replacement for an afternoon tea spread or morning tea snack and the best thing is they are fun and relitively low calorie so you can enjoy a few slices without the guilt!

 Posting this raw cheesecake recipe has for sure got me in a few fits of giggles. This recipe is the most intense, rich, sweet and technical recipe I have made to date. It took a few hours and a bit of pateince but Oh My Lord was it worth it ...?

Strawberry and Chocolate Parfait

Chocolate Mousse 
Serves four

2 Medium Avocados
1/2 cup of soaked dates
1/4 cup of cacao powder (if you use cocoa powder double the amount)
1/4 cup of honey/agave
2 tbsp. vanilla

Blend and pour into your flutes, place to cool

Strawberry Freeze
Serves four

3 frozen bananas
250 g of frozen strawberries
1/4 cup of honey/agave
2 tsp. vanilla

Blend and pour over the chocolate mousse  garnish with chopped fresh strawberries- Serve immediately
